So it’s here! SUMMER! Now we can all breathe a sigh of relief as we welcome those steamy nights with gin and tonics, lemonade stands at neighborhood garage sales, mimosa soaked patio brunches and most importantly a bounty of fresh fruits and veggies to get us through until that cold MN winter hits us again in November.

This past Sunday my Dad called me up with the awesome news that he had picked up 8 pounds of strawberries and was headed to my place to drop them off. What does one do with 8 pounds of strawberries, you ask? Well, first you eat some. Then you eat some more. Then you cut some up and freeze them until you come up with a suitable plan of attack

One of the best ways to use a substantial amount of fresh strawberries is to bake a cake. I found this recipe for a pink lady cake over at Smitten Kitchen awhile back. I baked this one up for our friend Lindz back in May. It was such a hit that I’ll be whipping one up for my Sweetie Baby, Elsa’s, 2nd birthday in July! More on that later. Stay tuned.
